I almost made it...

Today is Monday, so it's time for my usual Food Waste and weekly menu post. You might remember, last week I mentioned that I hoped to make it the whole month with no food waste. Well, I didn't. Ummm...I almost did. But then, not exactly. Well, this is all I wasted in the whole month:

These are a few sprigs of green onions. No excuse. Usually I cut green onions up, put them in a water bottle and store in the freezer until ready to use. I use green onions in a variety of things (like in Russian style slaw), so we use it up pretty quickly. This week I just never got to some of it. Oh well...It's still the closest I've ever been to having a No Food Waste month.

It's been pouring all day today with a rain and snow slushy mix. It's so grey and gloomy. I know it's great for our lawn but it's so dark and depressing at home right now. So I thought it was the perfect day for some soup. I made Borchsht. It's Russian beet soup, and I promise to post a recipe soon. Otherwise, that's what on our menu this week:

Mon.- Borchsht
Tues.- pasta with salad
Wed.- chicken curry, naan, brown rice
Thurs.- leftovers
Fr.- chicken quasadillas, cut-up veggies
Sat.- Not sure yet. We have a Baby shower and a Birthday party for my MIL in one day
Sun.- dinner with my sister (our little niece's B-day)

  2. I have never made Borchsht before and as I love beets I am sure I would love this as well.

  5. My on-the-go food is usually empanadas. Easy to eat, easy to make and easy to store forever. My menu for the past 2-3 weeks has been awful, so just take my word on that. Good job on the mostly no waste month!

  6. That's pretty good! We seemed to have wasted quite a bit lately, because were so busy with house stuff and I can't keep track of it all.
