Dear Nancy asked me to share a recipe of Okroshka (Russian summer soup). Unfortunately, the main ingredient of it is called kvas which is a bread drink you can buy only in the Russian stores. So instead, I decided to share my favorite spinach salad recipe. I actually made it for the meeting with the Church ladies on Tuesday.
You will need:
A bag of baby spinach (I usually buy one from Walmart for $1.64 but you can definitely use a bunch of spinach, washed and torn in small pieces)
1 box (16 oz) of strawberris
1 small can of mandarin oranges
1/2 cup candied sliced almonds
And for the dressing:
1/4 cup sugar
1/2 cup canola oil (or just vegetable oil)
1/4 tsp. paprika
Directions:
First, I usually make my own candied sliced almonds. I just put sliced almonds on a frying pan with no oil (!!), sprinkle lightly with sugar and add a few drops of water. I cook them on medium stirring constantly until slightly brown. Take off the heat and cool down. And try not to eat them all before you even started working on your salad (I always make some extra :)
Then whisk together the ingredients for the dressing, set aside.
Slice strawberries. Drain mandarin oranges.

DeleteCandied almonds, interesting. I've only made candied pecans for this salad...but you are right, it's hard to not eat them all before they go into the salad!
