Food waste and a menu, week 6/25-7/1

Pin It    Wow, I can't believe I just put 7/1 in the title? Where did June go??
OK, food waste. I did have some. I found a can of leftover apricot sauce for meat that's been in a fridge for way too long and started growing some foreign stuff:

And I threw away a handful of grapes that got lost in a fridge:

Total wasted: about 75c . I almost threw away this vegetable dip too because it expired a week ago:

But then I opened and sniffed it, then tried it and it was still good. The problem is that I had almost the whole tub of dip that nobody liked much. So I came up with the solution:

I thinly sliced potatoes, mixed with a dip and baked at 350F for about 50 min. Then uncovered, sprinkled a bit of cheese on top and baked for another 10-15 min. Voila, Au gratin from Frugal and Thankful Chez. It was a bit too greasy to my liking but boys licked their plates.

Talking about food, that's what we are eating this week:

Mon.- pork chops, mashed potatoes, salad
Tues.- baked swai, rice, green beans
Wed.- pasta w/tomato sauce, frozen veggies (soccer game)
Thurs.- vegetable quiche
Fr.- - pizza (date night)
Sat.- tuna sandwiches/ ??BBQ with friends
Sun.- crab salad/leftovers

What is on your menu this week?

PS-I will link this post to the amazing Kirsten's blog The Frugal Girl and her Food waste Fridays.

  2. I love finding a use for stuff that's about to go bad. But that was a great use of dip.

  6. Great idea on the dip, I think it's sorta fun to find new ways to use up what you have on hand. I need to get my meal plan lined up today it saves me so much time in the kitchen

  8. Isn't it fun trying to come up with creative ways to use up stuff? Among friends and family my more liquid creations are referred to humorously as swills and more solid ones as slops. As long as they taste good or kind of good I don't care what they call them and just laugh and announce what was in the swill or slop that God provided (if I can remember what all I threw in). Well done on the potatoes!!!
