Swai baked in a microwave

Pin It       I love fish but we rarely eat it because of the price. In the past few weeks I had salmon on my menu but never made because I didn't have it at home and didn't have much money to spend. What I did have is a bag of swai. I discovered swai last year when I was looking for an alternative for the cheap but oh-so-bland tilapia. It has sweet mild taste and flaky texture, and very inexpensive. I decided to cook it in a microwave (who wants to turn on the stove at 90 degrees outside???). The original recipe came from here but as usual I tweaked it to my liking:


   I substituted egg white with the whole egg, bread crumbs with panko (I just love the crunch these Japanese style bread crumbs give), added a pinch of oregano and basil and skipped salt. Cooked it for 6 min (for microwaves 1100 watt or higher), and it was a delicious meal in less than 10 minutes. Serve with some lemon wedges- forgot to add them to the picture:)

  2. I just recently discovered swai too when I made some fish tacos last month. Not too bad. And I only buy salmon when it's on sale!

  3. That looks delicious, I wish I was an imaginative cook but I am definitely a cook book kind of person, I find it so hard to substitute....

  5. I buy Swai in the box for about 28 dollars at meat store has about 17 large fish in plastic wrapped individually
