Coconut cinnamon rolls

We got hit by yet another winter storm here today (I thought the groundhog didn't see his shadow...What's up with that??). So what's the best thing to do on a snowy day like this? Well, bake of course! No wonder, I don't lose any wait in the winter :) I just love yummy food too much :)

So today I made some Coconut Cinnamon rolls:

I found the recipe on a Russian cooking site a while ago and tweaked it to my liking.

YOU WILL NEED:

For dough:

  • 1 cup milk, warm
  • 2 tsp (a little less than a package) active dry yeast
  • 1 egg
  • 3Tbsp unsalted butter, melted
  • 1+2 Tbsp. white sugar
  • 1/4 tsp salt
  • 2 Tbsp. vegetable oil
  • 1 tsp. vanilla
  • 2.5-3 cups white flour

For the filling:

  • 2 cups sweetened coconut
  • 4 Tbsp. butter
  • 2 tsp. cinnamon  (optional)

For the topping

  • sugar
  • cinnamon

You will also need extra vegetable oil to work with the dough.

HOW-TO:

Mix milk, yeast, 1 Tbsp of sugar and 2 Tbsp flour really well and put in a warm spot. I like to turn my oven on "warm" to make all of this dough. In the meantime, in a big bowl combine melted butter, salt, vanilla, 2 Tbsp. sugar, egg and oil, and whisk together. Add another half a cup of flour to yeast mixture, and combine it all with a liquid mixture. Mix nicely. Then keep adding enough flour until you get nice, soft dough (about 2-2.5 cups).

Cover a bowl with a clean towel and let rise in a warm spot for an hour or until it doubles in size (again I put it in my oven on "warm")

Get the dough out. Preheat oven to 350F. Melt 4 Tbsp. butter and mix it with coconut. Spread a little bit vegetable oil on the surface where you will work with the dough and on your hands so the dough won't stick. Divide dough in half. Cover one half. Roll another half of dough into a thin rectangular shape. Spread half the coconut mixture over and sprinkle with a teaspoon of cinnamon if desired (my kids love it with cinnamon, I prefer without). I did half and half today:

Carefully roll it into a tube and slice in about 2-inch pieces diagonally:

Cover your cooking sheet with parchment paper and spread a little vegetable oil on it. Put each roll about 2 inches apart and sprinkle with some sugar and cinnamon on top. Bake for 20-25 minutes or until golden brown. While one sheet is baking, work with the other half of dough to make more rolls. All the dough makes about 20. Enjoy warm or cold with a glass of milk:

  8. I was certain that much dough would make more than 20... but wow, that looks awesome. I'm a HUGE fan of coconut (excuse me while I gently pry and escort the Caribbean in me out of the room and away from the screen). I may try this recipe this weekend. I'll let you know for sure if I go through with it. Definitely against my diet, but meh. Coconut comes first.
