Food waste Monday and a menu, week 8/13-8/20

Pin It   Hello everyone. How's your Monday going? I want to thank everyone who stopped by here yesterday and for all your kind words. My friend is still in a lot of pain, physically and emotionally, but she's slowly getting better. She keeps herself busy and we all try to make her rest more!

  We are going to have a pretty hectic week. I have a few back-to-school sales I want to go to, we have two dentist appointments, some Church activities and lots of just little things that we need to tackle around the house. So our menu will be fairly simple. We did surprisingly good on food waste last week. Other than throwing away a few yucky strawberries, we did not have any waste. Wohoo!! Finally! It's a pleasant feeling! OK, done patting myself on the back...Now to our menu. With hardly any waste, we still have plenty of stuff in a fridge that need to be used up very-very soon. But I also have the abundance of this:


  That's kale. A LOT of it! That's all from our garden, and we have about 3 times more left there. So I'm desperate for some ideas to use it all up. Do you eat kale? What do you do with it? We tried a green smoothie last night which was surprisingly good and kids loved it. I tried it in a salad but it seemed a little too tough for my taste. Can you freeze kale? I think of adding it to vegetarian lasagna tomorrow but I'm running out of ideas. Help, please!! 

   Other than lots of smoothies, we also eat this this week:

Mon.-leftovers
Tues.-spinach/kale lasagna, salad
Wed.-mashed potatoes, fish sticks
Thurs.- buttermilk curry chicken, rice
Fr.-Church picnic (dinner provided!! Great day!)
Sat.- Chinese takeout (didn't do it last week and still craving it :), pizza
Sun. - pork roast, zucchini.

   We need to buy chicken and some veggies but otherwise we already have everything in a fridge or a freezer. I really hope to keep our spending low this week.

  3. Cut veins out and sprinkle with salt and sesame oil and roast to chips. They are supposed to be very tasty but I have never tried this technique.

  4. I like kale just steamed or stir fried with a little garlic. Bacon added makes these dishes wonderful. I know a lot of people who bake it and make kale chips. Haven't tried this yet, but want to soon.

    1. I've heard of kale chips but I wasn't sure about turning on my stove if I get something that tastes nasty :) That's why I was wondering who tried something like this before.

  6. A friend dried it in the oven like mentioned above and it was yummalicious! She brought it to potluck and everyone thought it was good! Kale is super good for you--lots of good nutrition.     1. I know that it's really good for you. That's why I planted it this year. I would use a bit here and there but my kale plants were overgrowing my peppers, that's why I majorly trimmed them. I was happy to see how much my kiddos loved the smoothie. Looks like I really need to give chips a try!

  7. Kale Chips!! Tear the kale into bite sized pieces, sprinkle with oil & sea salt, bake in the oven till crisp! Yummy!

  10. That kale is gorgeous! I make kale quiche, like broccoli quiche. And just sauteed kale with garlic and onions is always enjoyed here.

  11. You could try this recipe. I used spinach last time instead of escarole...was great and was actually thinking of using kale the next time I make it, after reading the health benefits of kale.
