Delicious salmon in tomato sauce

When I went back home a week ago, we also went to visit my Grandma. She is a pretty good cook but she's known for making food drenched in all kinds of butters and oils. Yes, you lick your fingers at first but then you have to go on a week-long diet to get rid of all those extra pounds that you consumed in just half an hour or so :)

But when this time she made this yummy salmon, I knew I had to share it with you because of how delicious and easy it was.

You will need:

  • 4-6 skinless salmon steaks
  • 1 big carrot
  • 1/2 onion
  • 1 clove garlic, minced
  • 2 cans tomato sauce
  • 1 tsp. dry basil
  • 1 tsp. dry parsley
  • 1/2 tsp. marjoram
  • 1 tsp turmeric
  • 2 TB olive oil
  • 1/2 tsp salt (optional)
  • 1/2 tsp sugar (optional)

How-to:

In a big and deep frying pan preheat olive oil on medium heat. Chop onion and grate a carrot. Cook vegetables until soft, stirring occasionally. When they are done, add garlic and cook for another minute. While it's cooking, whisk together tomato sauce with a cup of water and all the spices. If it tastes a little too sour, you could add 1/2 tsp sugar (I don't). Add salmon to the pan trying to put it in between the veggies. Cover with sauce and cook on medium heat for 30-40 minutes (increase time if steaks are thick). Let stand for ten minutes before serving. This fish goes great with rice, spaghetti or boiled potatoes.

And this sauce also tastes great on chicken.
