Vegan zucchini-banana bread

  I have two friends who are vegans. They fascinate me, and even though I'm not ready for a change like this in my food preferences (and probably never will be...I like milk and cheese too much!!), I do try to feed my family vegetarian and sometimes even vegan twice a week right now. This is actually one of my favorite baking recipes. It's my modified version of this recipe.  It's great for kids too, to sneak in some fruit and veggies.

You will need:

  • 2 cups zucchini, grated
  • 3 cups all-purpose flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 2 tsp cinnamon
  • 0.5 cup vegetable oil
  • 1 cup applesauce
  • 2 small bananas (1.5 medium)
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2  tsp. vanilla 
Don't squeeze your zucchini! Water in them will add to the moisture of your bread. Preheat oven to 325 F. Grease and flour 2 8x4 pans. Mix dry ingredients, except sugar, together. In another bowl mix oil, applesauce, bananas, sugars, vanilla. Combine with dry ingredients mix nicely. Add zucchini and stir really well. Pour into prepared pans and cook for 40-60 min. or until toothpick comes out clean.



Cool down completely and remove out of the pans. Bon appetit !

    1. I especially love because kids love it :) My older one can't stand zucchini but loves them in this bread :)
