My friend at Live and Learn-Toss and Turn asked me about the sticky drumsticks on our menu this week, so I thought I would share a recipe with you today.
They are really easy and even my picky kids usually lick their fingers.
YOU WILL NEED:
8-10 chicken drumsticks (skinned preferably)
1/2 cup balsamic vinegar
1/2 cup honey
1/4 cup soy sauce
2 Tbsp. dark brown sugar
1 tsp.ginger (I use ground because that's what I have but fresh would taste even better)
2-3 cloves garlic, minced (use fresh, not the canned stuff. It just tastes so much better!!)
1/4 tsp. cumin
1/4 tsp. paprika
a pinch of black pepper
HOW-TO:
Mix all of the ingredients together. Combine chicken with prepared marinade in a large plastic food storage bag. Press air out of bag. Turn bag over a few times to coat all of the drumsticks well. Refrigerate for at least 3 hours. Overnight is even better.
Heat your oven to 375 F. Line your 9x13 baking dish with aluminum foil. Add drumsticks with marinade to the dish. Bake for 35-45 minutes (depending on the size of your drumsticks). Then put on broil for another 5 to brown them.
Serve with mashed potatoes (I made garlic red potatoes tonight) or rice.

DeleteSounds good, we don't eat dark meat but I am going to try this with chicken breast!! Thanks for sharing
ReplyDeleteI've never tried it with chicken breasts. I'm not sure if they will turn out as juicy. I would probably slice it first before marinating. We occasionally eat dark meat because of it's natural iodide content. I try to stick to skinned drumsticks instead of thighs just to cut on fat a little bit.

DeleteThanks for the recipe. These sound delicious and I'll try them next time I get to the store for ingredients. And serving them with mashed potatoes sounds just right. Of course, I love mashed potatoes so I think they would be good served with anything.

DeleteYum! I should try that marinade sauce on on thighs (which is what's been on sale for a while now). Sounds really good, though I wonder what can I use instead of the brown sugar? Trying to skip sugar altogether.
ReplyDeleteIt should be great on thighs as long as they are skinned. And I would, probably, just bump the amount of honey a little or use natural versions of sugar instead.
