Last week we had a baby shower for a family member. It was a small family gathering, and we had a great time. My sister-in-law did an amazing job decorating and organizing it. I wish I had my camera with me :(
But we all were asked to bring something for dinner, so I brought pasta ham salad. I thought I would share the recipe with you today. It's easy, loaded with vegetables and great for potlucks and barbeques (summer is coming, right??) :
YOU WILL NEED:
- 1 box rotini pasta
- 1/2 box elbow pasta
- 2 cups fully cooked,chopped ham
- 1 cucumber, peeled
- 1/3-1/2 cup sliced olives
- 1 big salad tomato
- 1 red pepper
- small head of broccoli
- 1 can corn, drained
- 1 cup Italian dressing
- 1/2 cup light mayo (not Miracle Whip!)
- 2 Tbsp. lemon juice
- 1 Tbsp. white sugar
- salt, pepper to taste
- 1/2 cup nicely chopped parsley (optional)
HOW-TO:
In a large pot bring water to boil, add salt and cook pasta until al dente, rinse under cold water and drain well. While pasta is cooking, chop all vegetables but corn and olives.
In a separate bowl whisk together Italian dressing, mayo, lemon juice and sugar.
In a big bowl combine the pasta, chopped veggies, olives and corn. Pour dressing over salad; toss and refrigerate for at least two hours.
This salad is really very versatile. You can substitute some veggies or even omit some, and it will still taste great!

DeleteI haven't made pasta salad in while because it's usually a summer dish. However, this looks so good, I think we need to have some before the weather warms up.

DeleteI love pasta salads that are loaded. Such a good way to spread the goodness. I've been craving pasta for the past 3 months (I've gone low carb for a while). So if you do stumble across anything low carb, I'd love to try it. Now, stop tempting me with pasta goodies. I was just thinking this summer may be boring without all the wonderful veggie pasta dishes I cooked last season. Just boil pasta and add everything but the kitchen sink to it.
