Most of you know that we are experiencing an abundance of zucchinis this year, so I'm always on the look-out for new recipes. I stumbled upon this delicious recipe on a Russian forum and tweaked it to my liking (and budget - all pictures are mine):
You will need:
1 small zucchini
3 medium eggs
1/2 cup cottage cheese(small curd)
1 1/2 TB flour
4 TB grated mozzarella
1/2 tsp. baking powder
1 green onion spear
How-to:
1. First, drain cottage cheese a little bit. For that, I just put it in a colander over a soup bowl while I'm working on the rest of the recipe (if you are really-really frugal, you can add this "water" to your pancake dough later):
2. Reheat your oven to 350F. Spray a muffin form with oil and flour really well. This particular recipe makes about 7-8 muffin size quiches.
3. Grate zucchini and chop onions nicely:
4. Whisk together eggs, cottage cheese and flour until there are no more lumps, then add the rest of the ingredients:
5. Pour into prepared muffin form and bake for about 30 min. Cool down for a few minutes and enjoy!
Yum! It's definitely our new favorite. And the kids even eat zucchinis now :)

Quiches have always intrigued me, though I've never seen one with cottage cheese. I'll have to try it for sure. Great photos!

DeleteI picked 5 big zucchinis yesterday and Adam picked almost that many 2 days before. We had a delicious garden soup last night, but I'll make sure to buy enough eggs this week to try this out.

DeleteLooks fabulous! I've been wanting zucchini for bread & zucchini chocolate chip cookies (YUM!), but so far, we've got nothing. The cucumber are starting to ripen, so maybe the zucchini won't be far behind. I love quiche & will have to give these a try.
ReplyDeleteI only got a couple of cucumbers so far but my zucchinis have exploded this year :) By the end of this week, I'll pick about 20! Lots of grilling here on the menu :)
