Food waste and a menu, week 11/26- 12/2

Pin It                 I can't believe it but this cold is still lingering around. It's been 11 days already :( This is the worst cold I've had in years. My only hope is that after I'm finally over it , I'll have built enough immunity to last me through the rest of the season. One can hope...

   Sure enough, food and menus were not my priority lately. We ate out a lot, we ate unhealthy...I tried to feed kids OK choices of food (and not just mac and cheese) but I didn't cook much. Not surprising, we blew both our grocery and eating out budget this month. So for the rest of the week we are limited to no more than $5 for necessities like milk (other than Thursday). Otherwise, I'm cooking at home, and we are eating from the pantry. I need to use our cute newly organized pantry after all, right? :)

   We didn't have much food waste last week. Actually, the only thing that went bad is a bit of leftover salad that got lost at the bottom of a produce bin:

   Yuck! I also threw away about a cup of cooked chicken that was sitting in the fridge for more than two weeks. It didn't smell bad yet but I didn't dare eat it.

And this week we are eating:

Mon.- bits and pieces of different leftovers (cleaning a fridge)
Tues.- pasta Alfredo, steamed broccoli
Wed.- pork roast, mashed potatoes, salad
Thurs.- Subway (have a niece performing at night)
Fr.- curry chicken cauliflower bake.
Sat.- sandwiches/TBD
Sun.- soup (haven't decided yet which kind)/ My sister's B-day

   I hope to have a nice and clean fridge by the 1st of December. What are you eating this week? What is your favorite salad/ vegetable?

  1. With our kids being sick, our budget is out the window as well. Bad week all around... :( I'm going to go for a no-spend next week since I've already messed up our budget.

  2. Did the Honey & Cinnamon help any? My fridge needs cleaned so badly; with hubby working so many hours I haven't been cooking regularly or very healthy. I like having a schedule bit it hasn't been happening *sigh*. Yes I am scared to clean our fridge but with Christmas baking in the midst I have to get at it. Get better 11 days is way too long xx

    3. Oh, I'm on antibiotics right now! I have a sinus infection and all the gunk just goes down causing me to cough :(

  3. You must have a well stocked pantry and freezer. This week's menu sounds really good.

  4. We've had sick kids this last week, but thank goodness I was alright so I've held it together - just! I've returned to menu plans and freezing meals since the summer as the food budget was getting out of hand again! So much easier so I'm sticking with it now. Our favourite veg at the moment are sprouts - even the kids love them! X

    1. Oh sprouts! I can't even imagine my kids eating them. Especially my little one, he's VERY picky! But I love menu planning.I've been doing it almost every week for the past year, and it really helps.

  5. I had a terrible long-lasting cold a few years ago and on day 12 of it, my husband insisted I go see the dr. The dr. checked me over, patted my knee, said bad colds can take 10-14 days to run their course. He gave me no medicine and told me to continue resting. By day 14, I finally started feeling better and the symptoms went away.
    It sounds like you have the same kind and I really am sorry, it is just awful to be sick for so long.

    1. Yeah, it sounds similar :( I wish I could rest more but kiddos don't even take naps any more so snoozing for me was out of question. Especially when they were sick themselves because they were up half of the night too! It definitely doesn't help to get better quicker!

  6. It's sad that a lot of my bagged salads end up like that! And I eat salads every day for lunch. I've changed to just buying 1 bag per week and that seems to be working. Now if I could only go through my tomatoes before they get all mushy...

    1. I eat salad almost every day for lunch too! We rarely even buy bagged salad, I prefer a bunch of lettuce to it any day. But with us being sick we ate junk more that we should've and good food went bad, unfortunately:(
