Food waste and a menu, week 5/12-5/18.

Hello, hello, everyone!

How was your Monday?

Busy? Lazy? Or you don't even want to talk about it? As summer approaches, it seems like weekends fly buy quicker and quicker... I think, I need a week-long vacation...

Last week was not that good in the food waste department. I threw away some canned salmon that was sitting in a container for way too long, a handful of cilantro, 2 TB of canned peas that never got used up (family prefers frozen). But this was the saddest waste of all:

A whole bunch of salad. it got shoved to the very back of the fridge where it literally froze. What's the deal?? I was hoping to salvage some but, alas, it was beyond saving. Usually I wrap salad in a paper towel but this time, honestly, I just forgot... Bleh... What a waste of money. Oh well...

And this week on our table:

Mon. - chicken salad on bagels (ran out of bread :)
Tues.- baked ribs, coleslaw, 2-bean salad
Wed.- pasta and stir-fry (with added chicken)
Thurs.- cabbage and bean soup
Fr. -  BLT sandwiches with homemade smoothies
Sat. - dinner with friends
Sun. - leftovers

  2. Too bad about the lettuce. That happens to me sometimes and it's very frustrating. As always, the menu sounds good.

    1. I usually keep it in a produce bin. This time I just forgot all about it...

  3. Stuff freezes at the back of my fridge too- I don't know why either. If I turn the temp any lower I don't think it will be high enough for the rest of the fridge. :(
    Your menu sounds good! I have BLT's on my menu this week too- I have been in the mood for them for a while but I kept forgetting to get tomatoes. Now I have them and it's in the plan. :)

    1. BLTs are kids' favorite :) And I love them when the weather gets warmer because we can just eat outside. It's been raining here on and off for two weeks, so I'm ready for a break and the temperatures in mid-eighties.

  4. The last area to tackle in the area of frugality for me is to make weekly menus. I am the worst at trying to figure out what is for lunch or dinner. Breakfast is usually easy and quick. Mealtime is especially challenging when the weather is hovering at 100*F (like right now) - I do not want to heat up the kitchen by cooking. I know there is a bundle of money to be saved if I plan our meals better. You are inspiring me Lena!

    1. Well, thank you :) When it's hot outside, I stick to sandwiches (like BLTs), salads and grilling. I know what you mean about not wanting to heat up your kitchen :) I simplify it as much as I can in summer.
